Where This Began
I ran my first restaurants completely blind.

I had attitude. I had energy. I had hospitality in my blood. What I didn't have was the numbers. I didn't know what my GP% was. I didn't know what my prime cost was doing. I didn't know where the money was going — only that it wasn't staying.

I got beaten hard. The way only a restaurant can beat you — quietly, consistently, invisibly. You work harder and it takes more. You push longer and it gives less. You look busy and feel broke.

Then someone showed me the numbers. Really showed me. And everything changed.

Once I understood what the numbers were telling me — I stopped firefighting and started deciding. I stopped reacting and started designing. The restaurant didn't change. I did.

And I enjoyed it more. Because when the business starts making sense — when you can see it, measure it and move it — it starts to feed you instead of consume you. When that happens, you don't want to stop. You want more.

That feeling is what GrowthFork exists to give every restaurant owner who is ready to receive it. Over 30 years of hospitality leadership across the UK, South Africa and Turkey — I have seen what happens when a restaurant owner finally gets it. I have seen the shift. I want every owner I work with to feel that same shift.

The Lesson That Changed Everything
There was a man who had a book.
He called it his Bible.

His name was Peter. My mentor. A hospitality leader from a different era — when instinct was the only tool most managers had, and discipline was the only system most restaurants ran on.

The PLU Bible — Every Night. Without Exception.

After every service, the allocated duty waiter would sit down at the computer.

They would write every PLU number from the day by hand into Peter's book. Every line. Every figure.

Then they would fold the paper computer report and leave it inside the book.

The next morning — before anything else — Peter would open his Bible, check the handwritten figures against the report, and know exactly where his restaurant stood.

This was 1998. Peter did not trust computers. He had seen systems go down and data disappear. He was not going to let the numbers die with a power cut. So every morning the Bible was checked — because he understood that the moment you stop watching the numbers, the numbers stop working for you.

He never skipped a standards issue. Not one. Not when the week was good. Not when the numbers were up. Not when he was tired. Because he knew that what you walk past becomes what you accept. And what you accept becomes what you deserve.

At that time I did not know how to use a computer properly. I watched Peter and understood what data could do — but I could not yet use it the way it deserved to be used. So I bought myself a computer. I taught myself. As I learned, the systems got better. As the systems got better, the numbers got clearer. As the numbers got clearer, everything changed.

The PLU Bible is where the B.R.O.S.S. Ecosystem was born. Not in a boardroom. Not in a business plan. In a handwritten book, checked every morning by a man who understood that a restaurant is only as strong as the discipline behind it.

Peter believed in me before I believed in myself. Every system inside GrowthFork honours that.

Over 30 years of hospitality leadership across the UK, South Africa and Turkey. General Manager, operator, mentor and founder. I have built teams, led operations, read numbers in every format and learned what truly separates restaurants that thrive from the ones that simply survive.

The difference was rarely the concept, the location or the menu. It was always the leadership and the systems behind the operation.

I built the B.R.O.S.S. Ecosystem after seeing the same patterns over and over — talented managers without structure, owners without visibility, restaurants bleeding money they couldn't see and losing standards they couldn't measure.

I am a certified ABM member, an Enterprise Nation volunteer mentor and a trained speaker under Andy Harrington's programme. But more than any of that — I am someone who has been on the floor, in the kitchen and behind the numbers for three decades. This is built from experience, not theory.

Not consume them. A restaurant that traps its owner has failed its primary purpose — no matter how full it is every night. Freedom is the goal. Systems are the path.

Data is a leadership act — not an accounting one.
The leader who reads the numbers owns the room. The manager who avoids them is managing on borrowed time. Numbers are not the finance team's problem. They are everyone's responsibility.

Standards do not enforce themselves.
What you walk past becomes what you accept. What you accept becomes what you deserve. The leader who holds the standard on a quiet Tuesday is the one whose restaurant survives the busy Saturday.

Strong leadership is visible in the people around it.
If the people around you are growing, feeling safe and thinking like owners — you are leading well. Leadership is judged by its effect on others. Not by its effort.
